B.C. recipe: Here's how to make vegetarian stuffing

      One of the most popular holiday dishes is stuffing. But making stuffing doesn’t mean you have to have meat involved.

      Vancouver’s plant-based Big Mountain Foods proves that with this recipe for vegetarian stuffing, using their version of breakfast links (made with Canadian maple syrup, apples, carrots, and spinach).

      Vegetarian stuffing

      Prep time: 13 minutes

      Cook time: 35 minutes

      Total time: 48 minutes

      Ingredients

      1 package of Superfood Brekkie Links
      1 package (280 grams) of bread crumbs
      1 cup (250 ml) celery
      1 cup (250 ml) onion
      1 can of mushrooms
      2 cups apple juice
      ½ cup butter (vegan)
      2 tsp sage
      2 tsp thyme
      2 tsp rosemary
      salt and pepper

      Instructions

      In a large saucepan, melt ½ cup of butter on medium heat, and sauté onions and celery for only a few minutes.

      Place the bread cubes into a large bowl combining the butter and onions.

      Stir in the apple juice, then the canned mushrooms (the juice is important for moisture and taste).

      Dice the Superfoods Brekkie Links into small pieces and add to the bowl.

      Finish by adding sage, thyme, rosemary, salt, and pepper.

      Place all the mixed ingredients into a buttered casserole dish.

      Bake for 35 minutes on 350 degrees and let rest for 10 minutes.
